Add Worcestershire sauce, mustard, thyme, rosemary, and bay leaves before returning the beef to the pot. Simmer gently for 2 to 2½ hours until the meat is tender and the sauce thickens. Remove bay leaves and cool the filling completely.
Preheat oven to 200°C. Roll out puff pastry on a floured surface and cut into circles. Spoon 1–2 tablespoons of cooled filling onto each circle, leaving a border. Brush edges with beaten egg, fold over to form half-moons, and seal edges by pressing and crimping with a fork. Cut small slits on top for steam release and brush with egg wash.
Place pies on a lined baking tray and bake for 20–25 minutes until puffed and golden. Let cool slightly before serving.
